This course will cover the Housekeeping Department. In virtually every industry survey of hotel guests, hotel cleanliness is rated the single most important feature affecting their decision to choose (or not choose ) a specific hotel. For that reason, the Housekeeping Department may be deemed as the most important department in a Hotel given that it can either make or break a hotel. This course will therefore explore the Management of housekeeping duties within an establishment, supervision, and scheduling of housekeeping staff, use of different cleaning agents, and safety and security within the work environment. In the end, students will be equipped with competencies that are regionally relevant to function professionally within the Housekeeping department as they will gain knowledge through insightful discussions and most of all through practical sessions. 

This competency-based education course introduces students to professional dining room service. Students build a foundation of knowledge in various types of menus, service equipment, dining etiquette, attributes of a professional server, and preparing the restaurant for service in a regionally relevant context. Students develop knowledge and experience through hands-on, practical application of all steps of service including greeting and seating guests, greeting the table, taking the order, delivering the order, maintaining the table, clearing the table, and concluding service. Students develop an understanding of beverage service to include non-alcoholic beverages, the fundamentals of beer, wine, and spirits, proper wine service, and mixology. Professionalism, poise, communication, and hospitality spirit throughout all aspects of the dining room and bar service are emphasized.  Students' understanding of the Service industry will be assessed through a final major assessment. 

The first section of this competency-based hospitality management course provides students with a solid foundation of knowledge in the various segments of the hospitality industry to include lodging, food and beverage, managed services, recreation, theme parks, and clubs, gaming operations, MICE, special events and tourism. The course provides an overview of each of the major segments of the hospitality industry, their historical perspectives, and how they relate to each other. Emphasis is placed on the socio-cultural-economic and environmental impacts of the travel and tourism industry through the careful study of each of these impacts in regard to Kenya. Current, relevant, and meaningful hospitality industry trends and events in Kenya are presented, analyzed, and discussed.  Students are provided the opportunity to increase their self-awareness and their understanding of various hospitality careers as well as the challenges and rewards of working in the hospitality industry.  This course further instills a sense of hospitality spirit and a passion for the hospitality industry in each student by emphasizing Pineapple Power and encouraging students to cultivate and demonstrate Pineapple Power in all that they do and wherever they go.  

 

The second section of this  competency-based hospitality management course provides students with a comprehensive foundation of knowledge and experience in the importance of providing exceptional customer care and guest service in the hospitality industry. Emphasis is placed on the development of service standards, the problem-solving process, and exploring techniques for customer retention and guest satisfaction in a regionally relevant context. Students will learn how to effectively communicate verbally and non-verbally to deliver outstanding guest service.  Techniques and best practices for resolving customer complaints and working with angry and challenging guests are discussed and practiced. 

 

Every organization has a department that exclusively deals with handling guests at first sight. This is the front office department. This competency based hospitality management course provides students with an in-depth introduction to front office operations.
